I’ve always loved a good Gyro, so a while back I began making them at home. Costco carries thin-sliced lamb, so I use that and make the Tzatziki sauce with yogurt, Greek seasoning and chopped cucumbers. As good as mine are, I was very happy to find Gyro Republic on Highway 59 in Sugar Land. The owner is from India and he said that his gyros are a combination of beef and lamb. He spent some time in NYC learning from chefs and tasted more than 500 sauces to decide which ones to offer. Republic is a Chipotle-style, build-your-own restaurant. The customer can select a pita (always my choice), rice or salad as the base. If you prefer chicken, they offer that as well.
